Italian food: Carbonara

Pasta is a staple food for Italians, and the Carbonara is one of the most popular choices for a good pasta recipe. Do you want to try the real Italian Carbonara at home? Here is the way to make authentic Carbonara pasta:

To make Carbonara you need:

  • Pasta
  • Eggs
  • Parmesan
  • Olive oil
  • Pancetta
  • Salt
  • Onions
  • Black pepper

You can use any kind of pasta; spaghetti, or the bow shaped variants are the most common choices.

First, you put a lot of water in a pan and boil it. Once it is boiling, add salt and pasta, and then stir it from time to time to let the water settle down. You can check the cooking time on the pack or just taste it to see if it’s cooked. The time taken can vary from 7 to 12 minutes, depending on the kind of pasta.

Useful tip: pasta should be ‘al dente’ (not too cooked) because afterwards you will need to cook it a bit with the rest.

 

 

While you cook the raw pasta, you need to prepare the sauce. The first step towards making it is to break in one full egg, and one yolk in a vessel. Add some parmesan and mix with a fork. In a pa,n put a tiny bit of olive oil and once hot, add finely chopped onions. Add pancetta and leave it to cook. Don’t cook it too much, otherwise will be dry and hard!

 

As soon as the pasta is ready, drain it. Switch on the stove of the pancetta again and after two minutes (when you see is getting warm again) add the pasta and keep mixing and combining the contents. Stir everything and carefully add the egg mix while stirring at the same time. Switch off the gas after a minute because the egg should not be cooked totally. It should have a creamy consistency.
